Mysore Mallige Desi Rice (it is also called Mysore Malliga) is a cherished traditional rice variety grown using natural farming practices by our partnered farmer, Mrs. Sameera, in Puduru Village, Vikarabad District, Telangana. Naturally cultivated and single (semi) polished, this heritage rice is known for its soft texture, pleasant taste, and wholesome nutrition.
Its name, "Mallige" (Jasmine), reflects the beautiful white appearance of the cooked rice. It cooks soft and fluffy, making it an excellent choice for everyday family meals, including rice with dal, sambar, rasam, curries, curd rice, and other traditional South Indian dishes.
Unlike highly polished commercial rice, Mysore Mallige is single (semi) polished, helping retain more of the grain's natural bran layer, dietary fiber, and authentic flavour.

🌾 What Makes This Rice Special? (భూమిలో పాతరేయడం / traditionally stored underground)
This Mysore Mallige Desi Rice was grown using natural farming practices by our partnered farmer, Mrs. Sameera.
After harvest, the paddy was traditionally stored underground for approximately four months, a centuries-old practice locally known in Telugu as "భూమిలో పాతరేయడం (Bhoomilo Pātareyadam)."
Traditional farmers believe this natural storage process allows the paddy to mature gradually, improving cooking quality, enhancing taste, and helping preserve the grain before milling.
The rice was then single (semi) polished, allowing much of the bran layer to remain compared with highly polished white rice. Semi-polishing helps retain more of the grain's naturally occurring dietary fiber, vitamins, minerals, and authentic flavour.

🍚 How to Cook
For the best taste and texture, soak the rice for at least 30–45 minutes before cooking. As Mysore Mallige is single (semi) polished and retains more of the grain's natural fiber than highly polished rice, soaking helps the grains absorb water evenly and cook more consistently.
- Stovetop: 1 cup rice : 2.5 cups water
- Rice Cooker: 1 cup rice : 1.75 cups water
Since every kitchen and rice cooker is different, cook a small quantity for the first two or three times and adjust the water slightly to achieve your preferred softness and texture.
🍳 Tazawan Cooking Tips
1️⃣ Soak Before Cooking
Soak Mysore Mallige Desi Rice for 30–45 minutes before cooking to help the grains absorb water evenly.
2️⃣ Cook on a Low Flame
For stovetop cooking, simmer the rice on a low flame after it reaches a boil. Gentle cooking helps preserve the grain's natural texture and flavour and is traditionally preferred for desi rice varieties.
3️⃣ Retain the Soaking Water
Whenever possible, cook the rice using the same water in which it was soaked. This traditional practice may help retain naturally occurring water-soluble nutrients.
4️⃣ Wash Gently
Avoid washing the rice vigorously or repeatedly. A single gentle rinse is usually sufficient. Excessive washing may remove part of the surface bran that remains on single (semi) polished rice.
5️⃣ Water Ratio
- Stovetop: 1 cup rice : 2.5 cups water
- Rice Cooker: 1 cup rice : 1.75 cups water
6️⃣ Adjust to Your Preference
Every kitchen and cooking vessel is different. Cook a small quantity the first two or three times and adjust the water slightly until you achieve your preferred texture.
